Saffron is known as one of the most expensive thing on earth. Although mainly a spice, it is costlier than gold and is quite a smuggler’s charm too. There are a number of varieties of saffron available in the market as it grows in many regions of the world. However, the worth can be different of this widely produced saffron. The worth of different types of saffron is certified by ISO which is determined by three factors, colour, aroma and flavor. It can also be attributed to the method of cultivation of this plant, procedures adopted for plucking of the saffron strings and drying them.

Pushal saffron

Pushal saffron consists of stigmas with small parts of style. 

These stigmas have been separated from white part at the time of picking. There are different types of Pushal saffron based on the percentage of the style (yellow part of each string) along with stigma (the red part of each string). It is produced in two qualities.

Grade I has 5% style and color strength is about 220usp and higher.
Grade II has 10-15% style and color intensity is about 210usp and higher.

Ingredients: Saffron Superior Grade

Taste and Aroma: Rich, but subtle, perfumed and honey like.

Uses: Food coloring, Asian cooking, soup, seafood, rice and bread.

Substitutes: Saffron Powder Spanish Superior Grade, Fennel Pollen, Chili Threads and Turmeric Ground.





Fun Fact: Saffron is very expensive, because of the vast amount of land and labor required to produce just a little saffron. However, very little is needed for each recipe, making a gram enough for dozens of uses.
